Requiring little else than a watermelon, cream cheese, pistachios and a selection of berries, it’s perfect for impromptu, al fresco gatherings. And once the watermelon is sliced, it’s also an ideal dessert for children to help make: stirring together and spreading the cream cheese mixture; and decorating with the berries and nuts.

“It is very accessible. It’s super easy; anybody could do it, and it doesn’t take long. Sometimes even if you can bake something amazing, you might have 10 minutes’ notice that someone’s coming over,” says Reardon, laughing.

“So this is something that you can easily put together in a short amount of time, and it looks great.”

WATERMELON PIZZA

1 watermelon (whole)
1/2 cup (125 g/4.4 oz) cream cheese
1 tbsp icing sugar
1 tsp vanilla
1/3 cup (100 g/3.5 oz) blueberries
2 tbsp (20 g/0.7 oz) pistachios, shelled and chopped
1/3 cup (100 g/3.5 oz) strawberries

Step 1

Cut a large round slice of watermelon from the centre of the melon and remove the rind. You could use a cake ring for a perfect circle.

Step 2

Mix together the cream cheese, icing sugar and vanilla in a bowl. Spread the cream cheese mixture over the watermelon, leaving a border uncovered around the edge. Wash the strawberries and blueberries and dry with a paper towel. Hull and chop the strawberries. Sprinkle the blueberries, pistachios and strawberries on top of the cream cheese. Cut into pizza shaped slices and serve. This dessert is best made fresh but can be stored in the fridge for several hours.
